Ingredients:

1. 1 Large Salmon Fillet
2. Salt and Pepper, to taste
3. 1/2 cup Butter, melted
4. Juice of 2 limes (Plus one lime, thinly sliced)
5. 4 tbsp Australia Eucalyptus Honey
6. 1 tbsp minced Garlic
7. 1/3 cup Cilantro, roughly chopped

Method:
1. Preheat oven to 180-200 Deg Celsius.
2. Line and grease a large baking sheet with foil. Lay salmon on foil and season with salt and pepper on both sides to taste. Slip lime slices underneath the salmon.
3. Stir together butter, lime juice, honey, and garlic. 

4. Pour mixture over salmon. Fold sides of foil up over the salmon (don't worry if it doesn't cover the salmon completely).

5. Bake for 15-25 minutes. 

Ingredients:

400g can Coconut milk

64g Carob syrup

32g Carob powder

1. Blend coconut milk, Carob syrup and Carob powder together in a blender until smooth.
2. Pour coconut milk mixture into your ice cream maker and process until smooth and frozen, about 45 minutes.
3. Serve immediately as soft serve or put in freezer to thicken. Shouldn't freeze solid, but remain scoopable.

Ingredients:

1. 1 Large Salmon (110-170grams)
2. 1 tsp Salt
3. 1/4 tsp Pepper
4. 2 tbsp Butter
5. 4 tbsp Carob syrup
6. 5 tbsp Sriracha
7. 2 Limes (One juiced, one for slicing)
8. 2 tbsp Soy sauce
9. 1 tsp minced Garlic
10. 1 tbsp freshly chopped Cilantro

Method:
1. Preheat oven to 200 Deg Celsius.
2. Season salmon with salt and pepper to taste.
3. Melt butter in a medium saucepan over medium-high heat.

Ingredients:

1. 1 Ib steak (New York strips, sirloin, ribeye or skirt steak)
2. 2 Tbsp thin soy sauce or light soy sauce
3. 1 Tsp grounded black pepper
4. 1/2 stalk of lemon grass, sliced diagonally
5. 1 Tbs cooking oil
6. 1 Tbsp fish sauce
7. 6g carob syrup
8. 2 Tbsp Lime fresh juice
9. 1 to 2 Tbsp dried Thai chilli flakes or regular red flakes
10. 1 Tsp toasted sticky or Jasmine rice powder 

11. 1 small shallot
12. 1 green onion
13. handful cilantro
14. handful mint

Method:
1. In a mixing bowl or ziplock bag, combine steak, soy sauce, black pepper and lemongrass.
2. Give a massage to coat steak evenly with soy sauce and black pepper. Cover with a plastic wrap close tightly if you are using a ziplock bag and marinate at least 20 minutes at room temperature or overnight in a fridge.
3. Heat a cast iron pan or large skillet over high heat, add cooking oil. Place marinated steak along with excess soy sauce in marinate and lemongrass pieces on to the pan.

4. Cook steak 3 to 4 minutes each side for medium-rare, 4 to 5 minutes for medium if you are using 1-inch thick steak. Don't forget to sear side of steak as well. Remove from heat and let the steak rest for 5 minutes.
5. Meanwhile, slice shallot thinly, chop green onion, cilantro and prepare mint by taking leaves off from the stem. Set aside.
6. Slice steak into 1/4-inch thick.
7. In a large mixing bowl, whisk fish sauce, palm sugar, lime juice and chilli flakes all together. Stir in sliced steak along with toasted rice powder. Toss until steak pieces are coated evenly with dressing.
8. Finally, toss in all the vegetables we prepared. Transfer to a serving plate and garnish with toasted rice powder. Enjoy with sticky rice or by itself!

Notes for Toasted Sticky or Jasmine Rice Powder:
Heat a medium-size skillet over medium-low heat; add uncooked rice and toast until nicely golden brown, about 3 to 4 minutes. Transfer to a mortar or spice grinder and grind toasted rice into your desired fineness.

Ingredients:

1. 100g dark chocolate (70%)
2. 300ml full-fat milk
3. 4 tablespoons Carob syrup
4. 3 free-range egg yolks
5. 300ml whipping cream

Method:
1. Snap the chocolate into pieces, then place in a heavy-based saucepan with the milk.
2. Heat gently, stirring, until smooth, then remove from the heat to cool slightly.
3. Beat the Carob syrup and egg yolks in a bowl until pale and thick. Stir in the cooled chocolate milk, then strain back into the pan.

4. Cook the custard over a gentle heat, stirring all the time, until it thickens and coats the back of a wooden spoon. Don't allow the mixture boil or it will curdle.
5. Pour into a bowl and leave to cool, stirring occasionally.

6.Once cooled, whip the cream into soft peaks, and fold through the chocolate mixture.

7. Churn in an ice cream machine, until it's frozen.
