What is Carob?
  • Fruit of the Carob tree, long, slightly curve, dark brown pod.
  • Carob pods grow on a Carob tree and hang from the branches in bunches. 
  • From the point of flowering, it takes 11 months for the Carobs pods to mature on the tree ready for harvesting.
  • Carob is a tropical pod that contains a sweet, edible pulp and inedible seeds. After drying, the pulp is roasted and ground into a powder that resembles cocoa powder, but does not have the same flavor and texture of chocolate.
  • Carob is well known for its participation as a substitute for chocolate or cocoa as it offers not only more health benefits but is also much more people friendly when it comes to allergies or medical conditions and concerns.




Origin and historical uses?
  • Carob is a species that has a long history of use by humans. Carob is native to the eastern Mediterranean, probably the Middle East, where it has been in cultivation for at least 4000 years. The plant was well known to the ancient Greeks, who planted seeds of this plant in Greece and Italy.
  • Use of Carob products by humans date back to ancient Greece and Egypt where the plant was used as a source of food, beverage and medicine.
  • There is even mention of Carob in the Bible as “St. John’s bread” or “locust bean.” (This is because people believed that John the Baptist was eating locusts.)
  • Carob has been used throughout history as a remedy for diarrhea. Additionally, nineteenth century British chemists sold Carob pods to singers to chew on to maintain healthy vocal chords and soothe the throat.

What is the process for each product?

Raw Carob Powder 
This powder has been dried naturally without processed heat, and crushing the pods to kibble and milling into powder, during the process the temperature does not reach over 40 degrees, preserving beneficial nutrients including vitamins (A,B1,B2,B3 and D), minerals(calcium, magnesium, iron, phosphorus , manganese and potassium), antioxidants, fibre and protein.
Roasted Carob Powder   
Carob powder is made by crushing the pods to kibble and milling into fine powder form, underwent slow even roasting, darkening it slightly while still maintaining its full flavor and sweetness which perfect for baking and cooking.
Raw Kibble Nibbles
Select only the best eating varieties from the orchard and grind the pods into kibbles. It is 100% pure and raw and perfect for children or health conscious adults.
Oven-baked  Kibble

  • Medicinally, Carob is used for digestion problems including diarrhea, heartburn, and the intestine’s inability to properly absorb certain nutrients from food. These absorption disorders include celiac disease and sprue.
  • Other uses of carob include treatment of obesity, vomiting during pregnancy, and high cholesterol. In infants, carob is used for vomiting, retching cough, and diarrhea.

Carob very high in insoluble fibre and soluble fibre. What is these?
  • There are two types of fibre: soluble and insoluble. The difference is soluble fibre is digested by the body, insoluble fibre isn't.
Soluble fibre

Soluble fibre dissolve in water and slow digestion to give you that ‘’full feeling’’.
Insoluble fibre
Insoluble fibre passes through the body without being broken down. It adds bulk to the stool and appears to help food pass more quickly through the stomach have that ’’laxative’’ benefit.



Carob is caffeine free and Theobromine-free. What is Theobromine?
  • Primary benefit of Carob as a chocolate substitute is that, unlike cocoa, Carob contains no caffeine or theobromine. Theobromine is considered to be a stimulant.  Its effect is caffeine-like and similar to tea.  
  • Although theobromine itself does not have caffeine, the stimulation of the heart and nervous system that it causes acts like a caffeine. (Hence why dogs should not eat chocolate.) And it is why do not recommend Cacao for young children.


Carob is free of phenethylamines. What is phenethylamines (PEA)?
  • Carob does not contain phenylethylamine which can trigger migraines and allergic reactions to some peoples.


It is gluten free and suitable for coeliac patient. What is coeliac?
  • Gluten is part of certain foods - mainly foods made from wheat, barley and rye. Various symptoms can develop including tummy (abdominal) pains, tiredness and weight loss.
  • Coeliac disease mainly affects the part of the gut called the small intestine. It can occur at any age. Coeliac disease is caused by a reaction of the gut to gluten.

How would you convince a typical chocolate lover to give Carob a try?
  • It is going to be difficult task to convince a typical chocolate lover to change their opinion of getting an alternative for chocolate, as it is hard to find a replacement with the same flavor and mouth-feel that chocolate are providing. But if you are a chocolate lover and seeking healthy alternative, Carob will be the choice to make.
  • As a chocolate lover, the reason you crave for chocolate because of several reasons:
  1. It taste good.
  2. It made you feel good.
  3. It contains chemical compounds that made you happy, energetic, hunger and emotional satisfying.
  4. It creates addiction and cravings.
  5. Health benefits like good for heart and lowering cholesterol.
  • But with the list of benefits, there is also a list of disadvantages in consuming chocolate. Chocolate contains chemical substances from the same family as caffeine, which is found in coffee and tea. These chemicals are caffeine and theobromine. This family of chemical substances can cause or contribute to imperfect balance, racing heart, insomnia and sleep disturbances, fatigue, obesity, dizziness, irritability, agitation, anxiety, acne and many more. Some diseases and health problems, including heart disease, allergies, diabetes, stomach disturbances and depression can be also exacerbated by these substances.
  • Although some studies suggested that moderate consumption of chocolate and cocoa products containing caffeine may be beneficial to adult health, nobody disagrees that when it comes to children it is really best avoided all together.
  • Cocoa from which chocolate is made is naturally quite bitter and to cover up its bitterness, a large amounts of sugar and fat (including milk and cream) are added, which gives chocolate its rich, velvety texture and taste. These compounds and ingredients added lower resistance to diseases and hinder digestion and not mentioning the other additives that are added to chocolate before the product is finished.
  • For part of the process necessary to produce chocolate, the coca beans must be left to ferment. During this process, it is possible for cancer causing agents to form, as well as for insects, rodents and small animals to contaminate the fermenting cocoa beans. These contaminants most of the time remain in the finished product. FDA USA allows up to 10 mg of animal excrement per pound, or up to 25 insect fragments per tablespoon of cocoa powder.
    *The above points actually provide good reasons for chocolate lovers to seek alternative and Australia Carob is a good substitute for chocolate. It tastes great with a chocolate-like flavor but without the health risks, additives or contamination that comes with chocolate.

    Taste

    Carob is a bit of an acquired taste. Not because it is unpleasant in any way but it looks very like chocolate, it doesn’t taste very like it.

    Caffeine

    Chocolate has some caffeine and theobromine, both of which are stimulants and can be addictive.

    Carob contains no caffeine, theobromine or other   stimulants.

    Nutrients

    Chocolate has antioxidants and minerals (especially magnesium and iron), but also some oxalic acid that can inhibit mineral absorption.

    It has minerals (especially calcium and iron) and B vitamins, and some antioxidants.

    Sugar

    Chocolate is naturally very bitter, so it's mostly eaten with lots of added sugars.

    Carob has a lot of natural sweetness, so it doesn't need as much added sugar.

    Chocolate has some fat naturally from cocoa butter, but could have extra fats added.

    Raw Carob Powder
    Raw carob is lighter than the roasted. It has an astringent after taste.
    Roasted Carob Powder
    Roasted carob powder have more caramel flavor, and more intense as compare to raw Carob powder.
    Oven-baked Kibble
    Oven-baked kibble is chewy but the taste is lighter as compare to Raw kibble nibble but with more roasted flavor.
    Raw Kibble nibble
    Raw kibble nibble have more natural taste of Carob and it is chewy, high-fiber snack. It is perfect for children, vegan and health conscious adults.
    Carob Syrup
    Carob Syrup has sweet caramel taste, very similar to our local Gula Melaka flavor without the coco nutty taste. Sometimes, people relate the taste to the sweet soya sauce or thick maple syrup. It is a great substitute of maple syrup and honey.
    Can I have substitute Carob syrup for sugar? 
    • You can also add Carob syrup as a substitute for sugar into coffee or any of your favourite beverage. 



    Can Dialysis Patients eat Carob?

    • The amount of Potassium in Carob being 108mg per 20g serving.
    • The American Association of Kidney Patients recommends a daily potassium intake of 2,000 to 3,000 miligrams for patient on hemodialysis.
    • Patient on peritoneal dialysis are allowed a higher daily potassium intake,these patients can typically have 3,000 to 4,000 miligrams of potassium per day.

    *However, your physician should always determine your ideal potassium intake based on your nutrition needs and current health status.
